Meet the Baker
Hi, I’m Lauren, the baker behind Fresh Milled Goodness!
A few years ago, after dealing with inflammation and other health issues, I started paying much closer attention to the food I was eating. I spent some time gluten free, and during that season a coworker told me about Bread Beckers in Georgia, where I learned that grains could be milled fresh into flour at home. Until then, baking was not a hobby for me and I probably could not have told you where flour came from!
But once I started learning, researching, and baking with fresh milled grains, something clicked. I found that I could enjoy bread again, and I loved sharing it with other people. At one point, after I had really gotten into baking, my boss jokingly asked if I ate anything besides bread. That was probably a fair question.
Milling grain is not a fad for me. It is rooted in personal experience, careful learning, and a genuine belief that simple, well-made food matters. As a 2014 graduate of Auburn University with a degree in Hotel & Restaurant Management, I bring a thoughtful, professional approach to everything I make, with a strong emphasis on quality, care, and kindness.
My hope is to make fresh milled grains and baked goods accessible to my community so more people can experience the joy of eating real bread and baking with nourishing, freshly milled flour. I’m excited to begin offering both fresh milled grains and homemade baked goods, with plans to appear at farmers markets around North Alabama and Southern Tennessee in Summer 2026. I also plan to offer local drops as availability allows.
